The garfish Belone belone is a wonderful creature providing joy for sports anglers, when they hunt our lures, flies or bait along the shallow shores in the period from April to August. This video gives the audience a small presentation of the culinary value of this lovely fish. The meat is best, when it´s eaten fresh. First the fish is cleaned in order to remove the viscera (including the kidney along the back bone) and the scales. Then the fish can be filleted or cut into small pieces.The video is composed of images from the kitchen showing the procedure, when fillets and fish pieces containing the green bones are used to prepare wonderful meals.
